Making Tofu

Rinse a quantity of dried soybeans and soak them, in water, in the refrigerator overnight.

The exact quantity depends on how much tofu you wish to make. A colindar full, as shown, will yield about 2 pounds of tofu.

Soybeans will take quite a few hours to absorb the water and keeping them cool while soaking prevents them from souring before you have chance to use them.

You will also notice that the shape of the bean will change from round to elongated.
