The Tofu Box

I made this box in 1989 as a project for a woodshop class that I took at California State University, Long Beach. The plans came from a book that I have long since forgotten but it was published by Rodale.

This box is not a better solution to pressing the milk from the okara than the colander method but it looks cool and can handle a somewhat larger batch at a time. However, it does a good job of pressing the water from tofu, especially for making extra-firm tofu. A weight can be attached to the end of the handle.

The box is made of mahogany with a few brass screws.

It is shown sitting on a 3 gallon canning pot.

I also made some inserts that allow the inside dimensions of the box to be changed.

I now have plan online for building the box shown here. Thanks to one of my students, Parker Lee, who transferred my pencil drawing into AutoCAD and build the web pages for it.

The plan page is here.

After placing the cloth-wrapped beans or tofu in the box,put the top pressure plate on.

Attach the plunger and lever.
