Tofu may have a funny sounding name to some but is a highly nutritious source of protein enjoyed by millions all over the world.
Originating in China over 2,000 years ago, it eventually spread throughout Asia, landing in Japan in the late 700s where is became popular in the 1500s.
Tofu arrived in the United States with immigrant Chinese who came to work on the railroads in the 1800s. Many tofu makers sprang up on the west coast and eventually spread east. It was not sold in American supermarkets until 1958 Boys Market in Los Angeles became the pioneers. It is now available in most chains across the country and can even be found in Montana.
